Chocolate Diamond Sablés

The cookie is base on a traditional sablés. We coat around the cookie with sugar is looked like sprinkle diamonds on it. It’s really beautiful and without much sugar in the dough. Moreover, it’s smelled fragrance with almond flour and cocoa powder. Those ingredients make this cookie has luxury looking and rich taste. I must say the cookie is a perfect tea set with black tea.

  1. Unsalted butter 50 g
  2. Granulated Sugar 40 g (10g for brush dough log)
  3. Whole egg liquid 30 g
  4. Almond flour 30 g
  5. Cake flour 70 g
  6. Unsweetened cocoa powder 15 g
  7. 1/2 cup brown sugar (You can also use crystal sugar or sanding sugar)

Instructions

1. Shift cake flour and cocoa powder into a bowl. Place aside.

2. Add the butter and granulated sugar in another mixing bowl. Beat with a hand mixer until light and fluffy.

3. Add whole egg liquid in batches and beat each time until mix well. (Leave egg liquid 10 g for brush dough log)

4. Add almond flour and beat until combined.

5. Add the cake flour mixture in the bowl and stir with a spatula until the mixture forms a dough. (Do not over stir)

6. Roll the dough into a long log and wrap with cling wrap. Refrigerate it for 2~3 hours to firm up the dough.

7. Preheat the oven 340°F/170°C.

8. Pour the brown sugar in the tray.

9. Brush the dough log with egg liquid lightly and roll it on the brown sugar.

10. Cut the dough log into 0.5 cm and line on a baking sheet.

11. Bake for 13~15 minutes in the preheated oven until golden. Remove from the oven and place to cool.
